Looking for a way to sneak some veggies into a delicious treat? Look no further than these chocolate zucchini muffins!!
Ingredients
-1 1/2 Cups Flour
-1/2 Cup Vermont Nut Free Chocolates Cocoa Powder
-1 teaspoon Baking Soda
-1/2 teaspoon Salt
-1/2 Cup Oil
-1/4 Cup Sour Cream (can sub with yogurt)
-2 Large Eggs
-1 teaspoon Vanilla Extract
-1/2 cup maple syrup
-1 Zucchini, very finely grated (can add in 2 if you want more veggies)
-1 Cup Vermont Nut Free Chocolates Milk Chocolate Chips
Instructions
Preheat oven to 350°F.
In a bowl, mix together the flour, cocoa powder, baking soda and salt. Add in your oil, sour cream, eggs, vanilla and maple syrup. Give that a mix. Add in your zucchini and chocolate chips and fold into the batter. Divide the batter into 12 muffin cups and top with a few more chocolate chips. Bake for 15-20 minutes (or until you stick a toothpick in and it comes out clean depending on your oven).
